The morning after Thanksgiving, everyone is full. And tired! What to do with all those leftover sweet potatoes and mashed potatoes and veges? Pancakes! This recipe comes from one of my favorite cookbooks, The Moosewood Cook Book.
I like to get creative—which really means that I substitute according to what’s quick and easy and in my fridge the morning after. Toss in potatoes, onions, and veggies left over from the big feast. Mash into individual cakes. And fry in butter! What could be better for breakfast, lunch, or even a midday snack on a chilly afternoon? (Best served with a good book. On the couch.)
